Squash & Carrot Casserole

About the Recipe

Ingredients

  • 2 lbs Yellow or Zucchini Squash (sliced)

  • 2 lbs Carrots (grated)

  • 1 Whole Onion (chopped)

  • 1 Cup Sour Cream

  • 1 Cup Cream of Chicken Soup

  • 1 lbs Herb Seasoned Bread Crumbs

  • 2 sticks of butter (1 Cup)

  • 1 Tbsp salt

  • 1 tsp pepper


Preparation

Directions

  1. Preheat oven to 325 degrees

  2. Slice Squash, Chop Onions, Grate Carrots

  3. Steam Squash, Carrots, and Onion (about 10-15 minutes)

  4. Drain vegetable & add salt & pepper

  5. Mix Sour Cream, Butter & Cream of Chicken Soup together

  6. Pour mixture over the steamed vegetables (while they are still hot)

  7. Stir until butter fully melts

  8. Add 1/2 lbs Bread Crumbs to mixture

  9. Oil 9x13 pan and add remainig 1/2 of Bread Crumbs to the bottom of the pan

  10. Add Steam Vegetable Mixture to the pan

  11. Bake for 30 minutes
